I am the first Filipino Master Ham Carver in the history of
Spain. Since 2000 until today I have carved more than 7,000
hams from Mesón Cinco Jotas and other events.

I consider myself fortunate to work in Mesón Cinco Jotas, thanks to them
I've become a Professional Ham Carver.

A foreign ham carver always arouses suspicion, because the
people think that we can not carve a ham
like anyone born here in Spain, so the first reaction when I
show up to some event or celebration is the surprise, but it
totally gratifying to see people completely changed their expression in
as they see my work.

After each carving service I always receive the congratulations of those
present, by
which I am very proud to have the profession and especially my
passion for the ham.

Thanks for the support and confidence of the people who encouraged me
and the companies that are behind my success as a Master
Carver.

A good ham is a veritable feast for the senses. Its aroma, texture,
especially its color and flavor reaches its maximum expression through
a good slice.

The carving of ham is an art that takes years of practice and experience,
carve a ham properly can become a mere sampling of
ham into something really special, taste and aroma of ham
praise through the appropriate carving of the piece.
