I am the first Filipino Master Ham Carver in the history of
Spain. Since 2000 until today I have sliced more than 7,000
hams between Mesón Cinco Jotas and other events.

I consider myself fortunate to work in Mesón Cinco Jotas, thanks to them
I've become a professional Ham Carver.

A foreign ham carver always arouses suspicion, because the
people think that we can not cut like a ham
anyone born here in Spain, so the first reaction when I
presented at an event or celebration is one of surprise, but it
totally gratifying to see people completely changed their expression in

After each carving service I always receive the congratulations of those

which I am very proud to have the profession and especially my
passion for ham.

A good ham is a veritable feast for the senses. Its aroma, texture,
especially its color and flavor reaches its maximum expression through
a good slice.

The cut of ham is an art that takes years of practice and experience, the

ham into something really special, tastes and aromas of ham
praise through the appropriate carve of the piece.
